London Convention Centre Executive Chef David Van Eldik is a proud Londoner having been born and raised in the area. He started his career at the Hilton London, London’s four diamond hotel. Chef Van Eldik is a Red Seal and in June, 2005 he received the highly esteemed Certified Chef de Cuisine (CCC) designation from the Canadian Culinary Institute. Chef Van Eldik is a member of the Chef’s Association of London and supports Fanshawe College’s Culinary Arts program hiring students for in house mentoring opportunities.

As a strong sustainability supporter, Chef Van Eldik insists on purchasing from the local community with 100% of our poultry, pork and dairy products coming from Ontario. LCC beef is 100% Canadian, grown in Ontario and Alberta. As the LCC is located in SW Ontario, surrounded by fertile agricultural land, Chef Van Eldik is able to select fresh local produce. Based on the growing season in Ontario which starts in late May, approximately 5% of the LCC produce is locally grown early in the season and at the height of the season 50%-60% of the produce utilized at the LCC is locally grown. Whether for 20 or 2000, the LCC delivers an exceptional dining experience.

Fresh Start Foods
The London Convention Centre proudly works in partnership with a local based produce Supplier. Fresh Start Foods supplies us with produce you’ll enjoy by selecting the finest and freshest fruits, vegetables’, herbs and spices straight from our local Ontario farmers fields, through to our facility and lastly to our guests’ plates (season availability).

Fresh Start Foods demonstrates excellent Eco-friendly practices through their services and produce by reducing negative effects on human health and/or the environment: conserving natural resources, minimizing pollution, reducing the amount of water and energy used daily and reducing materials that are land filled. As well, of all the products received into the warehouse 99.13% is consumed or recycled while only 1% is sent to landfill, 2292 kilos of vegetable waste is used for animal feed daily, and they use fully maintained fleet of trucks that are environmentally friendly, speed governed, clean, sanitary, refrigerated and driven the shortest possible route to satisfied customers.
